Choose the right club!
Therefore it's important to take a high lofted club and not try to make some miracle shots:
The best choice is to take a 9 iron, a Pitching- or Sand Wedge.
Open your club face to make sure it's square at impact.
The reason:
The high grass is decelerating the inside (heel) faster than the outside (toe) of your club. The toe is still accelerating and the clubface is square at impact.
It's also important to hinge the wrists very early in the back swing to generate a steeper angle of attack. Also, it's necessary to play the ball a bit more back in your stance to make sure that you hit hte ball first and not the grass.
